The color of the olive is determined by its ripeness. The olive is initially green, and the longer it remains on the tree, the more its color will evolve towards dark purple/black.
Green olives are used for the production of "green fruity" olive oil, while black olives are used for the production of "ripe fruity" olive oil.

Virgin and extra virgin olive oils are olive oils obtained by exclusively mechanical or physical processes that do not cause any alteration of the product.
In order to classify the oils, their acidity level is measured and the olfactory and taste profile of the oils is analyzed.
An extra virgin olive oil must have an acidity level of less than or equal to 0.8% and be of impeccable quality with no taste or smell defects.
A virgin olive oil must have an acidity level of less than or equal to 2% and be of superior quality with the possibility of a slight taste or olfactory defect.
